My almost FIL (George) was brought home to live with one of his grown children. It had become too difficult not being able to visit him at his Memory Care facility during this COVID-19 Pandemic. This was an easy decision emotionally by all involved, but I can never express the gratitude we feel for her stepping up to the plate to be his main caregiver. She and her husband have gone above and beyond. We will be doing what we can to lighten her load. (Lot’s of cooking of easily reheated foods they already love, but that fit the special, dairy free diet required by our sweet George. )
Carrot Cake has always been my favorite cake. It’s been my birthday request year after year. George and I share this as a favorite.
I made a request to one of my favorite Facebook Groups….PeloVegans…to see who had a good Carrot Cake recipe. This group did NOT let me down.
If you are not yet familiar with the Minimalist Baker, you are missing out. I’ve made several recipes from this site and so far…all have been in the Make-Again category.
Raw Carrot Cake with Vegan Cream Cheese Frosting
I made the Frosting the night before and did substitute almond flour for the coconut flour since I had it on hand already.
Their recipe calls for a single 7-9 inch springform pan, but I had four smaller ones which totaled approximately the same volume and used those so it could be easily split between our house and theirs. It makes a good sized cake.
I did end up lining the pans with plastic wrap….I didn’t realize I was out of Parchment paper and since this is a NO BAKE recipe, there was no concern of the plastic wrap melting. Added bonus…I was able to wrap the ones I froze by just pulling the edges of the plastic wrap up and over once the “Cream Cheese” had set in the freezer. Don’t do it before or it will be a mess.
When I make these again…and I will, I’ll probably go with using a cupcake pan so that I can freeze and defrost them easily. It’s a very sweet treat. This way I can enjoy it over a month or so and share it more easily with friends.
Thank you Minimalist Baker….your recipe is George APPROVED!
